Chef and Grist contributor Daniel Klein posted a delicious looking recipe for a winter salad using hydroponically grown greens, local and seasonally grown produce. I'm not making it sound that cool, but it is. Klein also interviews the farmers at Dragsmith Farms, an organic vegetable and microgreen farm in Minnesota.
