As you (can) read from my last post, the Supreme Court ruling made my blood boil, but what better to calm me down than baking?!
I know it probably seems like an irrational solution, but baking has long been a Zen activity for me. Not to mention it's my dad's birthday, and I wanted to make him something other than yellow cake, although that's delicious, too.
I've lauded Colleen Patrick-Goudreau's "Vegan Baking" before, but I cannot tell you how delicious her Pear Tart recipe is! The shortbread crust is really easy to make, the egg- and cream-less custard filling is unreal and the cooked pears - and apples, which I used - on top are heavenly.
This is the second time I've made this, and the only substitutions I made were using a mix of apples and pears, and adding a teaspoon of vanilla to the custard.
