After canning applesauce recently, I had some local, seconds apples left over. I found this delicious recipe for German Apple Cake in Colleen Patrick-Goudreau's "The Joy of Vegan Baking." Winner of many vegetarian awards, "The Joy of Vegan Baking" is a must in any veg kitchen or, anyone interested in non-animal product based cooking. It's also the perfect cookbook to buy this time of year with upcoming batches of holiday baked goods.
I made the apple cake recipe, and instead of adding Earth Balance (vegan butter), I followed the author's suggestion of cutting out the fat and adding apple sauce. Totally worth it. I also had a 10" spring form pan, not a 9" as called for, and it turned out fine...
I also tested out the Chocolate Fudge recipe to decide if I was going to make it for holiday gifts. Unbelievably good.
Vegan baking can be seriously disappointing, especially when you are trying to convert people and/or after many unncessful attempts to adapt recipes, but this book is definitely a lifesaver.
